I have a Muster-Out Roll for an individual soldier who was in the 7th Veteran Volunteers from March,1865 to March,1866.  I was told this was a very rare document.  Does anyone know anything about these?

I'm sorry to say that I can't, it is falling apart and needs to be framed under museum glass  and probably put in a climate controlled setting.  I'm trying to figure out if it is really worth all of that.  Someone told me it is very rare which would make it worth while.  Monetary value is not what matters, its just if there are alot out there then its not as important as if it is rare and needs to be preserved.

No telling what it is worth. What you need to do first is to make sure it's insured, It is worth exactly what someone is willing to pay for it. That might be $100, and it might be $100,000. But if it's not on your policy, it's zip.

But it is certainly worth checking out buyers of original documents.
